The product is dried to 7% moisture.
There are 2 different cuts but both go thru the same cooking and drying process.
1.- stomach and intestine eviscerated
2.- both ends cut and eviscerated by pressure
Cooking and drying process is:
First cooking 45 minutes at 70 centigrade
Salting
Second
cooking 25 minutes at 70 centigrade
Salting
Drying in electric dryer till we obtain 7% max
moisture
